I'm a practicing RN and Board Certified Holistic Nurse. I served as cook and cared for priests and religious brothers in a monastery for Franciscan Friars for nearly 16 years. On the Feast of St. Francis in 2010, made the conscious decision to become a vegetarian to provide healing foods for ill and aging friars. Overtime, I came to understand my food choices as a spiritual practice.
In addition to attending numerous health lectures including those from: Dr. T. Colin Campbell, Dr. Neal Barnard, Dr. Gabriel Cousens and Dr. Caldwell Esselstyn I spent years educating myself in vegetarian, vegan, raw food, macrobiotic and Ayurveda nutrition. I studied and worked to earn certificates in Plant Based Nutrition from T. Colin Campbell Foundation, Cornell University-Ecornell and David Wolfe's Nutrition from Body Mind Institute. I'm also a Certified Raw Food Chef - educated by Matthew Kenney Raw Food Culinary Academy, Elaina Love's Pure Joy Culinary Academy and am certified in WFBP cooking by Rouxbe Culinary Academy's Plant Based Professional Cooking Course and Rouxbe Culinary Rx.
I self-published 2 simple cookbooks and teach whole food, plant based cooking classes at a local health food store & churches.
